Culatello



This prestigious "Salami" has its origins in Parma province, in the Zibello region. As it cures, the boneless culatelli loses moisture, resulting in a pear shaped final product with a sweet porky flavor emitting from silky rose-colored meat. Culatello has a fantastic texture which almost melts in the mouth. Serve with simple crusty country style white breads, sweet melon or fresh figs, and an elegant Malvasia or Fortana d'annata, a slightly fizzy red wine.
