Red Sicilian Goat Cheese Pesto


Servings: 4  |  Featured Product:  Menu Soleggiati Tomatoes

Ingredients

150 g Menu Soleggiati Tomatoes
50 g Basil Pesto
60 g Seedless Black Olives
20 g Extra Virgin Olive Oil
50 g Goat Cheese
70 g Heavy Cream (optional)
300 g Linguini Pasta


Directions

With a blender mix the Soleggiati Tomatoes with the extra virgin olive oil and some oil from the Soleggiati Tomato. Once finely mixed add the Basil Pesto and the goat cheese previously crumbled and mix with a wisk. Adjust in salt & pepper. Thin slice the black olives and add it to the mixture. Cook the linguini pasta in aboundant salted boiling water. Once "al Dente" drain the pasta and mix it with the previously made Pesto. If needed add a little cream. Serve hot.
